Vinification

 

organic-winesSoft pressing of the whole grape; cold static  decanting of the must at a low temperature. Fermentation at a controlled temperature in  stainless steel tanks and refinement “sur lies” method for 6-8 months. Refinement in bottle for further 6 months.
